So it’s not rocket science, but sometimes when I make pancakes I make extra and freeze them in ziploc baggies for later in the week when we need a quick breakfast. Astounding. I know.
So I make a double portion of batter with my Pioneer baking mix, some milk and some buttermilk and then whatever we don’t eat, I freeze in the freezer. They can be popped in the toaster like storebought frozen pancakes, only they don’t taste like cardboard and freezerburn. (If they’re thick they may need to be toasted twice to get heated through.)
I’m not sure exactly how long they’ll last in there, because, well, around here they usually don’t last more than a few days before they’re eaten. 🙂
