Taco Soup – Souper Easy – ;)

Okay, so here’s my super easiest of easy recipe for taco soup. It’s a simple version, since Big Daddy doesn’t like cooked onions. Or cooked tomatoes. Or cooked chilis. Or corn pretty much any other vegetable you might be inclined to shove in there. 😉

This soup doesn’t take very long to make, is adaptable, and you can make as much as you want – which to me is one of the things that make it so great. The other plus is that everybody likes it. We moms know how great a thing that is.

Here goes:

1.) In a large pot, combine one quart of water, one taco seasoning packet, one can of black beans (and liquid), once can of pinto beans (and liquid), and some beef bouillon (to taste). Bring just to a boil and then reduce heat a little.

2.) While the pot is boiling, brown two pounds of ground hamburger with one packet of taco seasoning and drain. Add to the soup pot.

3.) Once the beans are tender, the soup is ready.

Sprinkle with a handful of shredded cheese and a dollup of sour cream. Serve with tortilla chips.

That’s it! It’s just that easy. My mom and I made it once with a can of rotel with chilies and onions and that was really good, too! I’ve even topped my bowl with pico de gallo or diced avocados, things of that nature. Mmm!

I have a tendency to make it a little different each time I do it (sometimes I add garlic and onion powder, etc)…feel free to add anything you like. It’s a very flexible recipe!
