Shannon at Rocks In My Dryer has offered up this question for bloggy consideration:

On one of those days, which surely we must all have, where the day hasn’t gone as planned, there is next to nothing in the pantry, take-out and sandwiches are out, and hey let’s just add in a sick child and husband on the way home for good measure… what do you fix? What is your fall-back recipe?

Well, let me just say first-off.. I really have been trying to plan better so those kinds of days don’t happen so often. But you know, sometimes they just do. On those days it’s a pretty safe bet I’m going to make something with potatoes. We almost always have potatoes on hand. I know, I know, dependence on potatoes as a staple may be a southern thing but if you’re not getting your regular recommended dose of spuds then I don’t think you realize what you’re missing! 😉 They’re just so versatile! You can boil them, bake them, mash them, make soup out of them, slice them and bake them and make potato chips or french fries, you can make hash browns, they are good for breakfast, or lunch, or dinner… and the best part is they are cheap!!

So assuming I’d have potatoes on hand, the first thing I would make would be our family casserole if I had ground beef and green beans, or a variation of that with pinto or ranch style beans if I had those instead. If I didn’t have those, I could make potato soup or baked potatoes. Baked potatoes in the microwave are the the fastest and easiest and everyone in my family likes them.

But if alllll of those weren’t available.. do you know what I would make? Pancakes. And that’s a fact. 😉

But really planning is better so that’s what I’m trying hard to do. Trying. Really, really hard. It’s a learned habit.
